I got this recipe from Paula Deen a few years ago and have made these cookies every Christmas since. They are amazing and delicious and you can't just eat one. Paula's recipe calls for chocolate cake mix but I substitute devils food cake mix for a different flavor. Also, if you are making these use a stand mixer and not a hand mixer. I burned up my hand mixer one year trying to make them because the batter gets really thick.
Ingredients:
1 box of devils food cake mix
1 egg
1 8oz brick of cream cheese
1 stick of butter
1 teaspoon vanilla extract
Confectioners sugar
Directions:
1. Let cream cheese and butter soften to room temperature
2. Preheat oven to 350 degrees F
3. Beat cream cheese and butter together using stand mixer until smooth
4. Beat in the egg
5. Beat in the vanilla extract
6. Beat in the box of cake mix
7. Let batter refrigerate for two hours to firm up (I usually forget to do this and they turn out fine)
8. Roll batter in tablespoon size balls and then roll them in confectioners sugar
9. Place the ball about two inches apart on cookie sheet and bake for 10-12 minutes
10. Cool cookies then dust them with more confectioners sugar
